A few days ago, I had Panlong, a famous late-night snack. It was not very satisfying, so I decided to make it myself!

The little eel I bought was kept for two days until it spit out soil and mud

Sprinkle 5 spoons of salt and the eels vomit blood and die

Mince onion, ginger and garlic

ml of oil. After the oil boils, put the eel in the pot. When the eel is plated, add the pepper, ginger, garlic, chili, and chili powder and stir-fry until fragrant. Add a spoonful of salt (the eel itself is killed with salt). Finally, add the perilla and a little light soy sauce (personal preference)

After serving, sprinkle with chopped green onion
