Before cooking, blanch the washed Chinese toon briefly in boiling water. The Chinese toon will be fragrant, crispy and tender, and will be more distinctive when used to mix tofu and stir-fry. Toona buds are best before Grain Rain. It should be eaten early, fresh, and after Grain Rain. The dietary fiber will age, the taste will be boring, and the nutritional value will be greatly reduced. Toon should be eaten after blanching. Some data show that each kilogram of toon buds contains more than 30 mg of nitrite, and the old leaves contain 53.9 mg of nitrite per kilogram. Such a high content can easily cause nitrite poisoning. The test results found that the nitrite content of toona leaves washed with water was 34.1 mg per kilogram, while the nitrite content in toon leaves blanched with boiling water was only 4.4 mg per kilogram. The test also proved that salted toon cannot reduce nitrite content. So try to eat toon that has been blanched in boiling water.
