Curry chicken and diced potatoes
Overview
When it comes to what dish to go with rice, curry has to be mentioned. My favorite thing is to cook a pot of curry, pour it on rice, and then eat it with a spoon...

Wash the chicken and cut into pieces; cut the carrots, potatoes, and onions into pieces separately. I said cut it into pieces, and then stepped away. When I came back, someone cut all the vegetables into cubes, even the bones of the chicken were removed and cut into cubes... I kept saying to myself: "I'm not angry, I'm not angry, I'm not angry... This is the only way to train a chef..." Even though I am a fake chef.

Chicken pieces need to be blanched, but this step is omitted for diced chicken. Heat the oil in a pan, sauté the diced onions until fragrant, put the diced onions aside, add the chicken and stir-fry, add a few drops of cooking wine, stir-fry evenly, then add the diced carrots and potatoes, stir-fry evenly.

Add an appropriate amount of water and bring to a boil. If the vegetables are all diced, you don’t need to cook them for too long, and you should add less water.

After the water boils, add the curry and stir slowly until it becomes thick.
