Wash tomatoes, onions and ginger.

For fresh crucian carp, ask the seller to kill it when you buy it. When you come back, wash it, remove the black membrane in its belly, and drain it.

Cut the tomatoes into cubes, cut the green onions into sections, and slice the ginger and set aside.

Heat the oil in a pan, add the crucian carp and fry for a minute or two.

Pour in boiled water to cover the fish.

Bring to a boil over high heat and add green onions, ginger and cooking wine.

Add the tomatoes and cook for a minute or two and turn off the heat.

Transfer to a casserole, bring to a boil over high heat, and simmer over low heat for an hour.
