Then we beat the egg whites. Add a few drops of lemon juice to the egg whites to help beat them. If you don’t have lemon, you can also add a few drops of white vinegar. It doesn’t matter if you don’t have white vinegar. Just beat them

We add sugar in three steps. Beat the egg whites until fish-eye-sized bubbles form for the first time. Beat the egg whites for the second time until they begin to thicken. Add the sugar for the third time until the egg whites form a big curve when you lift the whisk.
