Steps
-
Prepare the ingredients, separate the egg whites and egg yolks and put them into oil-free and water-free containers. The butter and cheese need to be left at room temperature until they are soft
-
Add cream cheese to milk and stir with warm water until smooth and grain-free
-
Add melted butter to step 2 in 2 to 3 batches and stir evenly; then add lemon juice and stir evenly
-
Add the egg yolk three more times and mix well
-
Sift the low-gluten flour and cornstarch into the cheese batter, and stir evenly with a rubber spatula. (The completely mixed cheese batter should be placed in the refrigerator until it thickens again before the next step.)
-
Add lemon juice to egg whites and beat with an electric mixer into a rough foam
-
Add another third of the caster sugar, turn to medium-high speed and beat until fine foam
-
At this time, add another third of the fine sugar, and continue to beat until it can show texture. Add the remaining fine sugar until it forms wet foam (that is, after lifting the egg beater, you can pull out a slightly curved sharp corner). Be careful not to beat it to dry foam!
-
Take out the thicker cheese paste from the refrigerator, add 1/3 of the meringue into the cheese paste, use a rubber spatula to gently stir from the bottom up, and mix evenly. Do not stir in circles!
-
Then pour all the ingredients in step 9 into the meringue, and continue to stir evenly
-
Preparation before entering the oven: Preheat the oven to 160 degrees for 10 minutes. Wrap the bottom of the cake mold with tin foil to prevent water from entering the bottom during the water bath. You can also apply a layer of butter inside the cake mold to facilitate the finished product being released from the mold
-
Pour the mixed cake batter into the cake mold until it is 7-8 full, and gently tap it on the table a few times
-
Pour about 3cm of water into the baking pan
-
Place the cake on the water bath baking pan, put it into the preheated oven at 160 degrees, bake for 30 minutes to color, then turn to 145 degrees and bake for 35 minutes
-
After baking, put on insulated gloves and take out the cake. After it cools down, the cake will separate from the sides of the mold. At this time, you can unmold it and eat it, or you can put it in the refrigerator and eat it
