Tricolor cat ears
Overview
Cat ears are actually a kind of noodles, and the face flaps are shaped like cat ears. They are small and cute, hence the name. The prepared cat ears are delicious whether mixed with meat, various vegetables, or stir-fried. Cat ears are smooth and refreshing, easy to make, and rich in nutrients when paired with vegetables. It has always been one of my favorite pastas. This weekend, I used purple cabbage, spinach, and carrots and added flour respectively to make colorful cat ears, which added a bright color to the ordinary food.

Wash and cut the spinach into sections, put it into a food processor and beat it into a bowl of green juice; wash and cut the carrots into sections, put it into a food processor and beat it into a bowl of orange juice; take 5 leaves of purple cabbage, wash them and chop them into pieces, put them into a food processor and beat them into a bowl of purple juice. Strain the vegetable juice through a strainer to remove the vegetable residue and set aside.

Add a little salt to the flour, and slowly pour the beaten vegetable juice into the flour (do not add it all at once, but add it in batches).

Use chopsticks to stir into a fluffy dough.

Use your hands to form a non-sticky dough.

Knead the carrot and purple cabbage juice into a dough in the same way. In this way, the three colors of dough are ready. Wrap the three doughs in plastic wrap and let them rise for more than half an hour.

Take carrot dough, for example. Use a rolling pin to roll the risen dough into a uniform thickness.

Cut crosswise first, then cut lengthwise into small pieces of the same size. Sprinkle the cut pieces with dry flour to prevent them from sticking together.

Prepare a bamboo curtain or sushi curtain, put a small piece of dough on it, press down on the curtain with the outside of your thumb, and quickly rub the dough forward to make it roll.

In this way, the cat's ears are rubbed.

Repeat the above method to rub all the cat ears. Sprinkle the rubbed cat ears with dry flour.

After the cat ears are ready, start to make the soup. Add the minced meat to the pot with green onion, ginger, cooking wine, light soy sauce, etc. and stir-fry. Then add the fungus, oyster mushrooms, diced tofu, diced potatoes, beans, shiitake mushrooms, tomatoes and other vegetables that will not rot as soon as they are cooked. After stir-frying, add chicken stock and water, and season. Add cat ears and cook, stirring frequently. Note: cat ears take longer to cook. After it is cooked, add the egg drop. Add vinegar and chili pepper according to personal taste. A bowl of fragrant cat ears is served. In winter, there is nothing I love more than a bowl of steaming delicious food.
