Cut the winter melon into half-centimeter-thick pieces.

After soaking the shrimp skin for ten minutes, wash it with a mesh sieve.

Add an appropriate amount of oil, stir-fry the shrimp skin over medium-low heat until fragrant, then assemble and set aside.

Add oil and fry the winter melon. Stir well, add a small amount of water, cover and cook for two to three minutes, turning once in the middle.

When the winter melon is about to be cooked, add the shrimp skin and stir-fry evenly, then simmer for another two to three minutes.

If the winter melon is translucent, add half a spoon of oyster sauce, appropriate amount of salt to taste, and stir-fry until the juice or a little juice is reduced.
