Stir-fried chestnuts with sugar
Overview
Yesterday I baked it in the oven, but the opening was not ideal. I tried this method today, stir-fried with sugar, and the result was better than roasting. It was easy to peel, and the chestnuts were also very soft, waxy, and sweet!

Pour the chestnuts twice with clean water first, then add some refined salt and a spoonful of starch, soak for five minutes, rinse thoroughly and drain.

Use a knife to cut on the bulging side until the outer skin is penetrated.

Then cut it into a cross-shaped knife, and cut more on both sides, so that the mouth will open wider when cooking.

Place them in the pot with the cut side facing up.

Add one-third of the hot water to the pot, cover and simmer for five minutes.

Open the lid of the pot and take it out first.

Add a small bowl of water to the pot, add an appropriate amount of sugar, and cook until big bubbles form.

Add chestnuts and stir-fry for one minute.

Add water until it is level with the chestnuts, cover and cook for twenty minutes.

After the juice has dried up, add a spoonful of cooking oil and fry for a minute.
