Sweet jujube puree
Overview
I make my own jujube paste because my child is allergic to bean paste filling and not allergic to jujube! My child wanted to eat bean paste roll cakes. After thinking about it, I finally decided to use jujubes as raw materials to make jujube paste instead of bean paste filling. In this way, my children can eat jujube paste buns, jujube paste roll cakes and the like! Although jujube paste is more troublesome to make, it is worth it no matter how tiring it is to see your children happily eating it!

Steps
-
Choose a pot of high-quality gray dates from Xinjiang, wash and set aside.
-
Soak the washed dates in tap water overnight, drain the water the next day and set aside.
-
Put the soaked dates into the pot and bring to a boil over high heat (add enough water at one time), cover the pot and simmer over medium-low heat for 20 minutes, then simmer over low heat for 30 minutes. After cooking, continue to soak overnight.
-
The boiled dates become easy to peel after soaking them overnight! Don’t throw away the boiled jujube water, you can drink it! Now you can peel the skin. This step is very laborious, but it is the most important step. After peeling, the texture is very good, and it is more delicate than the one that has been beaten with a machine!
-
This is what it looks like after peeling the skin and removing the core!
-
There was still meat on the date core, so I didn’t want to throw it away, so I put it in a bowl and ate it when it was time to rest!
-
Put the peeled and pitted jujube meat into the wok, add brown sugar and white sugar, stir them evenly, and then turn on the heat. When you first start frying, use medium heat. When the jujube paste starts to bulge a little, change to low heat and fry slowly. During this period, be sure to stir fry constantly to prevent it from getting burnt easily.
-
During the frying process, the brown sugar and white sugar turn into water. At this time, you need to keep stirring and frying, so that it does not burn!
-
When the frying is almost done, add cooked white sesame seeds. How much you add depends on your mood. If you don't like it, you don't have to add it. Wait until the shovel can stand upright, then it is done.
-
After the jujube paste is fried, let it cool and put it into a piping bag. It will be very convenient to use!

This is a well-made jujube paste roll cake. My children love it very much!
