Fried Shrimp Croquette
Overview
Are fried shrimp and croquettes different foods? That's right! It is often sold in general Japanese family restaurants. Later, I discovered that it is rare to see shrimps in croquettes made from potatoes. In fact, when they are combined, they will have a wonderful chemical reaction!

Prepare all ingredients

Wash and remove the shells of the shrimps (retain only the tail shells) and remove the shrimp threads

Cut the shelled shrimp in half and keep the tail part

Cut the other piece into small dices

Peel the potatoes and cut into strips, rinse with water to remove the starch on the surface

Put the potato strips and 2 eggs into the pot, add water, bring to a boil over high heat, then turn to medium heat and cook for 15 minutes

Add a small amount of oil to the wok, heat it up, add the shrimps, and stir-fry over medium heat

Add 1 tablespoon of rice wine and continue to stir-fry until the shrimp changes color and the wine evaporates completely, turn off the heat and let cool

Put the cooked potatoes into a large bowl and grind them into mashed potatoes

Peel the hard-boiled eggs and cut into small cubes.

Pour all the diced eggs and shrimp into the mashed potatoes

Add salt and black pepper to taste and mix well.

Take part of the mashed potatoes and shape it into an oval shape, press the shrimp tail into it, and then shape it into a round shape

Put the prepared croquettes into the flour, coat the surface with a thin layer of flour, and gently tap off the excess flour.

Then put the croquettes into the egg wash, coat the surface with a layer of egg wash and take it out.

Finally, put the croquettes into the bread crumbs and coat the surface with a layer of bread crumbs.

Prepare the oil pan (180℃), put the croquettes in one by one, and fry slowly until golden brown.

Drain off the excess oil from the fried croquettes, cool briefly and then serve.
