Let the store chop the ribs, wash them with water, soak them in the middle, and change the water several times.

Drain the pork ribs and cut the pumpkin into cubes.

Fry the pumpkin in a hot oil pan so that it won't become too mushy and take shape later, then serve on a plate.

Pour oil into the pot, add rock sugar, and cook over low heat until the rock sugar melts and the oil bubbles and turns light yellow. (Be careful not to overdo it, otherwise you will feel bitter)

Pour in the ribs, stir-fry the sugar and wait until the ribs are well colored.

Pour in hot water, add ginger, garlic, and one star anise, and cook slowly over medium-low heat.

When the water is reduced to one-third, pour in the pumpkin and pour in a little light soy sauce to make the color darker. Finally, bring to a boil over high heat, add an appropriate amount of salt, collect the juice, and remove from the pot.
