Caramelized Apple
Overview
The technical requirements for shredded dishes are relatively high, and the key is to master the method and heat of frying sugar. There are generally three frying methods, one is oil frying, the other is water frying, and the best one is oil and water mixed frying. But no matter which method is adopted, after the sugar is put into the pot, it should be stir-fried continuously so that the sugar is evenly melted by heat. It will make big bubbles at first, and then the bubbles will become smaller. When the color of the sugar changes from bluish-white to slightly yellow, it is basically the heat for drawing.
