Fried pancakes
Overview
This dish was taught by my mother after I got married. My parents, who have lived in poverty all their lives, have a preference for pancakes and wild vegetables. The pancakes served by relatives at my husband's house were very fragrant with beans, peanuts and sesame inside. In order to eat less steamed buns, I also ate pancakes with my mother-in-law. But there were too many pancakes, and I was too lazy to fold them when they were dry, so let’s fry pancakes. It’s very simple and delicious, and my husband also ate it. This is a dish made for my parents, and it doubles as a meal and a vegetable!

The pancakes must be dry and can be broken into pieces. I used unfolded pancakes, but folded pancakes bought outside can also be used

Prepare two basins, one with some cold water for soaking the pancakes, and one for rubbing the pancakes

Fold the pancake into the size that can be put into the basin, and lightly dip it in water. Don't dip it for a long time. Just dip it on one side. Take it out when it is dipped in water

Heat the pan and add oil, put the pancakes in and stir-fry. If there are too many blisters, stir-fry for a while. Stir-fry the pancakes until they are crispy. When you swing the spatula and it feels lighter than when you first put it in the pan, it's almost done. Add the chopped green onions and stir-fry for a while until the onion aroma comes out.
