Super soft white toast bread
Overview
This recipe was given to me by a baking friend, who said it was super soft. I tried it and it was true. However, since making bread, trying various flavors of toast has indeed brought me endless fun. I hope I can keep making toast.

Mix all ingredients except salt, yeast, and butter into a smooth dough, wrap in plastic wrap, and refrigerate for 2 to 3 hours before proceeding;

Take the dough out of the refrigerator. When you pull it up, you can already see the discontinuous gluten;

Add yeast and knead for 2 minutes, then add salt and continue kneading;

Knead until the dough reaches an expanded state, add butter, continue kneading until the butter is completely absorbed, and then repeat the washboard kneading. Knead until the dough can pull out a thin and unbreakable glove film, which is the complete expansion stage;

Cover the kneaded dough with plastic wrap and let it ferment for 60 minutes at a temperature of 28°C. When the volume is about 2 times larger, turn it over, beat out the air, fold it in three, and let it ferment for another 30 minutes;

Take out the air from the fully fermented dough, divide it into 4 equal parts, and roll them into rounds one by one. Do not overly squeeze out the air already in the dough, and do not destroy the continuity of the gluten. Cover it with plastic wrap and let it rest at room temperature for 15 minutes;

After the rounding and relaxation is completed, roll it out for the first time and deflate it. Likewise, try not to break the already formed gluten and let it rest for 15-20 minutes;

Roll out the roll for the second time, drain the air properly, and put the shaped dough into the toast mold;

Place in a toast box and ferment for 60 minutes at a temperature of 35°C and a humidity of 85%. Let the toast box rise until it is 9 minutes full and close the toast lid

Preheat the oven, with the middle and lower layers set to 145°C for the upper heat and 165°C for the lower heat. Bake for 30 minutes. After taking it out of the oven, tap the table several times. Take the bread out and let it cool before slicing.
