Overview
The meaning of making this bread lies in my love for Xinliang flour. Flour is ground from wheat, so I decided to use quinoa flour and wheat germ to make this wheat-shaped bread. It is also a support for this event!

First prepare the ingredients, quinoa cake flour, wheat germ, bread flour, yeast, eggs, sugar, salt, milk, butter

Put the ingredients except butter into a mixing bowl

Place the mixing bowl on the chef's machine and turn on the 2nd gear to knead the dough. Pay attention to the state of the dough during the kneading process. Knead to the expansion stage first as shown in the figure

Add butter to the dough and continue kneading

Knead the dough until it reaches the fully expanded stage, that is, the dough can be stretched to form a hand mask

Knead the dough until it is smooth, then place it in a basin and cover it with plastic wrap for the first fermentation, until it is twice as big as the original dough!

After fermentation is complete, if the dough does not shrink when you press it with your fingers, it proves that it is fermented

Deflate the dough and weigh it

Weigh the dough into 100g, 280g and 200g pieces, cover it with plastic wrap and let it rest for 15 minutes

Roll out 280 grams of dough into a square shape with even thickness

Then cut the dough into thin strips evenly, not too wide

Arrange the cut noodles into the baking pan. You can arrange them according to your own aesthetics, without being too neat

Then divide the 200g dough into small doughs of 8g each

Then knead them into shapes on the ears of wheat

Use scissors to cut a few slits on both sides of the dough and complete all the small dough pieces in sequence

Then divide 100 grams of dough into 6 parts and roll into strips

Make two braids, one long and one short

Place the wheat ears of dough on top, wrap the longer braided dough around the stem dough, and fold the short braided dough in half in the middle of the long braided dough. The quinoa and germ bread dough is ready!

Add a bowl of warm water to the oven to maintain humidity in the oven and place the baking sheet in! Turn on the fermentation function of the oven and ferment for 40 minutes

Take out the fermented dough, preheat the oven to 180 degrees, heat the middle layer up and down and bake for 25 minutes!
