Little Hedgehog Bean Paste Bun
Overview
I remember when I signed up for Food World in 2010, I saw someone making little hedgehog buns. They were really cute! On a whim, I tried to make it once, but the dough was too soft, and the little hedgehog's quills were listless before it had risen. After steaming, it looked more like a little fat man, and it made my one-year-old niece so happy that she was reluctant to eat it! This time I kneaded the dough to make it harder, and when deflating, kneaded some dry powder in. The result showed that the softness and hardness were still acceptable. When I go back to my mother’s house in a few days, I will make it for my niece again! ^_^

Mix flour, yeast, sugar, add water and make a slightly harder dough.

Knead evenly, cover with plastic wrap, and ferment until 2-2.5 times in size. I fermented it at room temperature overnight.

Take out the fermented dough, deflate and knead evenly. If you feel the dough is soft, add some dry flour and knead it in so that the hedgehog's spines stand out! After kneading evenly, divide into several equal portions

Roll into a ball, flatten, and roll into a round cake. Add appropriate amount of bean paste filling.

Wrap it well, pinch it tightly, close it downwards, and shape it into an oval shape. (Hedgehog’s body)

Pinch out the hedgehog’s head at the front end

Use scissors to cut out the hedgehog's thorns one by one. (Press the scissors slightly lower and the thorns will be longer.)

Finally, use black sesame seeds, red date skin, or red bean or something like that, and put them on both sides of the head to make eyes.

Place in the steamer and let rise for ten minutes

Bring to a boil over high heat, then turn to medium heat for 12-15 minutes, simmer for 3-5 minutes before opening the lid.
