Our braised hoof
Overview
Braised hoof is a dish that has always been loved by people in our cuisine. When there was no pressure cooker, a large pot was used to add enough seasonings, and then slowly simmered over low heat until it was cooked through. It is fat but not greasy. Now with a pressure cooker, it only takes half an hour to cook. I have slightly improved the seasoning and added an appropriate amount of dried chili peppers. It is not spicy at all and can help to remove the fishy smell and relieve the greasy taste.

After washing the hooves, scrape the pig skin clean

Pour into a pot under cold water, remove and wash

Prepare seasoning

Pour the oil into a hot pan, add the rock sugar and stir-fry until all melted

Add the trotters and coat all the sugar color in the croquettes

Add cooking wine

Add 4 tablespoons light soy sauce and 2 tablespoons dark soy sauce

Add boiling water (just enough so that the pressure cooker will not evaporate the water}

Pour into the pressure cooker, cover and cook for 30 minutes

When the time is up, I can open it after the gas is exhausted. I can see that the soup is thick and there is no need to put it in the pot to collect the juice.

Blanch a few asparagus heads in boiling water for decoration

Serve it and it will come off the bone with a gentle pull.
