Air-dried beef jerky
Overview
For children in Inner Mongolia, beef jerky is an indispensable snack. Not to mention the beef jerky specialty stores all over the street, there are often beef strips being dried on our balconies and courtyards, with a delicious taste that makes us salivate.

After washing the beef, cut it into long strips about 5cm wide along the grain, and drain the water. Apply refined salt evenly on the front and back of the beef jerky with your hands (use salt according to your personal taste, you can rub it twice for the taste). Place it in a breathable tray in a ventilated place, and turn it over every 24 hours. It will be air-dried after about a week

Brush a layer of oil on the oven rack and place the dried beef jerky evenly on it

Wrap the baking sheet with tin foil and place it on the bottom layer of the oven. Preheat it to 220 degrees for 10 minutes and put the rack in the middle layer

After heating up and down at 220 degrees for 5 minutes, observe through the window that the fat part of the meat turns golden and oil overflows, then bake for another 2 minutes

Place it on a kitchen towel to absorb the oil and serve immediately. You can store it in a sealed jar in the refrigerator
