All ingredients, sift flour

Pour all the vegetable oil, milk and 20 grams of egg yolk sugar into the pot and stir

Place the pot on the fire and heat, stirring constantly, until the liquid boils

Immediately remove from the heat, pick up the pot and shake slowly to shake the liquid in the pot to properly cool the liquid in the pot. Swinging around and around, about a hundred times.

Pour all the sifted flour into the pot

Stir constantly until flour and liquid are evenly combined

Separate the egg whites and egg yolks, and make sure there is no water or oil in the egg white basin

Pour the cooled hot dough (cooled to a temperature that is not hot) into the egg yolks

Use a spatula to stir evenly into an egg yolk paste. Set aside. Preheat the oven to 140 degrees for upper heat and 120 degrees for lower heat

Start beating the egg whites. First beat the egg whites a few times with a whisk until big bubbles appear, as shown in the picture

Add 1/3 of the white sugar (20g), add a few drops of white vinegar (optional if not available), and continue to beat

The state when sugar is added for the second time, when the protein bubbles become finer

When sugar is added for the third time, the egg white becomes thicker

Continue to beat the egg whites until you lift the egg beater and small sharp corners appear as shown

Add 1/3 of the egg whites into the egg yolk batter and mix evenly.

Pay attention to the technique and don’t defoam. The picture shows the mixed state

Pour all the mixed batter back into the remaining egg white bowl

Mix well

Pour it into the mold, shake it a few times to knock out the bubbles, and put it into the preheated oven for 60 minutes
