Overview

I like to use fresh Sichuan peppercorns in my dishes. Fresh Sichuan peppercorns don’t have the overpowering taste of red Sichuan peppercorns but have a numbing fragrance.

  1. Prepared ingredients (bought local cucumbers)

  2. Clap it with a knife to remove the cucumber seeds.

  3. Peel off the outer skin and cut it into two parts (the skin is a bit thick which affects the taste)

  4. Cut into small pieces.

  5. Marinate it with salt and remove the juice.

  6. Heat oil in a pan and add condiments and stir-fry until fragrant.

  7. Pour in cucumber cubes.

  8. Stir well (fresh peppercorns are really fragrant)

  9. Add balsamic vinegar and stir-fry.

  10. Add light soy sauce and stir-fry.

  11. Sprinkle a pinch of sugar and stir-fry.

  12. Remove from pot and plate.
