Overview

The best way to make a quick-to-eat cold dish is that the peanuts are flavorful on the outside and crispy on the inside. The crunchiness of the peanuts adds texture and flavor, making the mixed greens no longer bland. Nutritious and delicious, it is one of my favorite cold dishes in summer.

  1. Fry the peanuts in advance and let them cool for later use. Put the peanuts in the pot with cold oil and set it to the lowest heat. If it changes color slightly, turn off the heat and take it out, otherwise it will become mushy.

  2. Blanch the cut spinach until it changes color. Cool and squeeze out the water.

  3. Add the fried peanuts, vinegar, salt and sugar and mix well. The acidity of vinegar varies, so add seasonings according to your taste. I like strong flavors, so I think the sweet and sour flavor is more delicious.
