I bought a pack of marinade from a certain store before, but I was too lazy to mix it with some spices (star anise, grass fruit, cinnamon, tangerine peel, bay leaves). My mother often made it for us in the past, and I know how to make it a little bit. However, tonight’s pig trotters were made by me based on my mother’s experience and my own ideas. The result was pretty good, so I decided to post it to share with you. It’s my first time making it, and some of it didn’t work well. I hope you can give me some advice. I’m very grateful. Wash the burned pig's trotters, put them in a plate, and soak them in water. At this time, you can prepare to boil the water.

Okay, now let's make the ingredients. First, clean the skin of the shallots like peeling garlic, and then slice them

Just leave one section of the green onion, but you don’t need the bottom section.

Then pat the garlic with a knife without cutting it, then slice the ginger slices, and then tie the green onions together to prevent the green onions from falling apart

The ingredients are ready, now stir-fry the shallots in peanut oil.

Then add the green onions, ginger, and garlic and stir-fry until they change color. Place on a plate and set aside

At this time, while the smell of shallots, scallions, ginger, and garlic remains in the pot, we pour the pig's trotters that have been boiled in water and chilled with ice cubes for a long time into the pot and stir-fry.

At this time, remove the cooked soybeans and leave the soybean soup. (To make soybean soup, you need to prepare soybeans. Soak the soybeans for three hours, then add 1,500 grams of water and simmer in a high-pressure small hot pot for 1 hour to obtain 1,000 grams of water. There is no need to add any ingredients, just simply use the soybean water as the brine)

Take 20 grams of pure natural Chinese medicine concentrated marinade bought at a certain store. If you do not use the prepared marinade, it is recommended to mix some spices (star anise, grass fruit, cinnamon, tangerine peel, bay leaves, dark soy sauce, rock sugar) and boil them first to make the marinade

Tie the shallots tightly with a medical bag and prepare to throw them into the brine

Put the marinade and shallots into the brine and bring to a boil. Pour in the pork trotters that have been stir-fried in a pan

After cooking for almost half an hour, remove the green onions and ginger slices and discard them, pour in light soy sauce
