My hometown is Jinzhou, Liaoning, and I am an authentic Northeasterner. Jinzhou has developed transportation and beautiful scenery. It is a pearl in the Western Liaoning Corridor. Jinzhou has a long history and many delicious foods. There are bean cakes, Goubangzi smoked chicken, Beizhen pig's trotters and so on. The most famous one now is probably Jinzhou Barbecue. The first choice for outsiders coming to Jinzhou is to visit Jinzhou Bijiashan and then try Jinzhou’s seafood and barbecue. The dish I made today is dried tofu with hot pepper. The best and most famous dry tofu is Hongluohyeon dry tofu. Hongluoxian Town now belongs to Huludao City. Historically, they were all affiliated with Jinzhou City. Later, Huludao was promoted to a prefecture-level city, and Hongluoxian was also included in Huludao City. Hongluoxian dried tofu is thin and fine, and must exceed 18 sheets per pound. The soil and water support the people. The Hongluoxian dry tofu is made well thanks to the local Hongluoxian mineral water. Its thinness is unique in the country. Dried tofu with hot pepper is the most common dish in Northeastern restaurants. It is also a home-cooked dish for ordinary people's dining tables. It is simple and easy to make, and my husband loves it most. Dried tofu is delicious no matter how it is stewed, mixed, boiled or stir-fried. And it can be paired with a variety of ingredients, so it goes without saying.

Cut dry tofu and pepper into diamond-shaped slices and set aside.
