Braised noodles with chives and eggs
Overview
Stewed noodles with leeks and eggs is a traditional way of eating in my hometown. When I was a child, I couldn't eat white noodles every day. I only had the opportunity to change my diet during the New Year. When the weather is hot before and after the first fall, in order to save trouble, people will choose cold noodles. Firstly, it is convenient, and secondly, it improves life. Leeks are a vegetable that can be found in every household’s garden during this season. Eggs are also laid by one’s own old hens. Noodles can be dried noodles or hand-rolled noodles made by oneself. On the first day of the holiday, if the conditions are better, you can buy some sesame juice and some home-grown cucumbers to make the cold noodles taste even better. When I was a kid, this delicacy was just a bowl for everyone, no matter how full they were. Now that everyone’s conditions are better, the cold noodles are made in different ways, but I can’t forget the taste of braised noodles with leeks and eggs. Wash the leeks and cut into fine pieces.

Add peanut oil to the wok and when it is 70% hot, add leeks and salt and stir-fry.
