Slaughter and wash the mandarin fish, wash the onions and ginger as well.

Make 3 diagonal cuts on both sides of the mandarin fish, rub some salt all over, cut the ginger and green onions and set aside.

Heat oil in a pan, add mandarin fish and fry until slightly brown on both sides.

Add cooking wine + soy sauce + sugar.

Then add ginger and green onion.

Add water and bring to a boil.

Add 1 tablespoon of balsamic vinegar to the remaining juice and a little water starch to the pepper.

Pour it on the mandarin fish and it's ready.
