Overview

I have read many baking books, and almost all of them describe puffs. I feel they are quite difficult, and I have never dared to try them. Finally one day, my confidence suddenly bursts out, and I have to do it no matter how difficult it is. How will I know if it doesn’t work if I don’t do it, so I found Brother Jun’s book and followed his recipes. I made it and it was a great success. I originally wanted to use the Whipped Cream in the refrigerator to make the filling, but my boss ate it all. In fact, it is good to use ice cream to fill it. I forgot to buy ice cream, so I had to use egg whites, sugar and essence to beat it. It was not bad, fragrant and sweet.

  1. Evenly distribute 3 eggs, set aside, use a small non-stick pot, put the butter, water, salt and sugar in the small pot, add to boil while stirring, use medium-low heat until boiling;

  2. Reduce the heat to a simmer, pour in all the flour, and use a wooden spoon to quickly stir into a paste. It feels like the batter does not stick to the pan, and the water and oil powder can be evenly blended together. Turn off the heat;

  3. Remove the batter pot from the stove and stir with a wooden spoon to dissipate heat. Stir until the batter is not too hot. Pour in about 1/3 of the egg liquid. Stir quickly and then add the egg liquid. Please remember not to add it all at once. Add it one at a time. Stir evenly after adding. After the egg liquid is added to the batter and stir well, pick it up with the handle of a wooden spoon. It can form a slightly longer and stable inverted triangle. If there is no batter dripping down, it proves that the thickness is appropriate. Do not add more egg liquid;

  4. Put the piping nozzle on a piping bag and fill the piping bag with batter;

  5. Pour the batter onto a baking sheet lined with tin foil, about 2 inches from the bottom, and then place it in a preheated oven. Use 400F when preheating. Bake until the balls rise, then bake at 365F. Do not open the oven door during baking. Remember;

  6. Bake until not too deep golden brown, then place on the drying rack;

  7. In fact, the inside of the puff is hollow, and you can make a hole by just digging it with your fingers;

  8. Use a piping bag or rubber push tube to squeeze the filling in and serve.
