Rice pancake
Overview
Saving overnight rice is no longer just about stir-frying. I recently discovered this frying method. It tastes very much like the crispy rice you ate when you were a kid, and it also has the aroma of egg, meat, and green onions...

Ingredients
Steps
-
Chop the ham sausage and green onions, and beat the eggs. The stupid eggs I use are relatively small, and two ordinary eggs are enough.
-
Break up the rice with chopsticks and add salt, chicken essence, five-spice powder, green onions, diced ham and beaten egg liquid.
-
Mix well without any lumps
-
Pour cooking oil into the pan over low heat. The amount of oil used for normal fried rice is enough. Pour the mixed rice paste evenly into the pan and smooth it out with a spatula.
-
Fry slowly over low heat throughout the process, shaking the pan from time to time during the frying process. When it feels like it has formed into a cake, turn it over to prevent it from falling into shape and falling apart.

I cut the fried rice cake into heart shapes with an omelette. If you don’t have an omelette, you can cut it into strips or cubes, or cut it into triangles like pizza. I won’t have any objection if you don’t cut it and eat it while holding the flatbread😅
