Overview
There is a famous Masan potato chips on Tongwei Road in Lanzhou. For many years, both those returning from other places and locals have walked to Tongwei Road via Zhangye Road. They don’t mind queuing for half an hour to get 20 potatoes, 20 tofu skins, 2 rice cakes, and a bottle of carotene. The food is comfortable and refreshing. Today I will share with my friends how to make homemade boiled potato chips. The taste is not bad at all.

Peel the potatoes and cut into 0.3-0.4 mm slices.

Rinse off the surface starch with running water and dry.

Bring the water to a boil, add the potato slices and blanch for about 45 seconds to 1 minute. Take them out.

Pour into cold boiled water and drain. Set aside.

Pour an appropriate amount of vegetable oil into the pot, add star anise, cinnamon, cumin, and peppercorns and stir-fry over low heat until the aroma is released. Remove the spices and discard them. Pour in Pixian bean paste and stir-fry over low heat until red oil emerges.

Turn off the heat and add the paprika. Stir evenly while hot.

Add thirteen spices, light soy sauce, and white sugar, and use the residual heat to stir evenly.

Ladle in 1 tablespoon of water for cooking potato slices, add appropriate amount of salt and chicken essence, mix well and set aside.
