Chilled bitter melon
Overview
The most bitter part of bitter melon is its flesh, which is the soft white substance below the outer skin. That flesh is not only bitter, but also tastes very bad. As long as those things are removed, the bitterness of the bitter melon will be greatly reduced, and the taste will be crisp and tender. If you chill it and serve it with your favorite sauce, bitter melon will not only become a delicious side dish, but it can even be turned into an after-dinner dessert, which is really delicious!
