Cold Melon Shreds
Overview
I made a palate-cleansing dish today, hoping to help clear away the fat. The main ingredient is cucumber. It sounds so refreshing, right? In the past, cucumbers were mostly eaten in pats, as side dishes, or washed and eaten raw. Today, they are eaten in a different form, grated into shreds. Tasty and refreshing, quite good.

Grate the cucumber into shreds.

Make the sauce. Add 2 tablespoons of light soy sauce, 1 tablespoon of balsamic vinegar, 1 tablespoon of sugar, and 1 gram of salt to the bowl. Stir well.

Cut the dried chilies into small pieces and put them in a bowl. Put an appropriate amount of oil in the pot. When the oil temperature is 70 to 80% hot, pour the oil into the chili bowl. Form chili oil. The oil temperature should not be too high, otherwise the peppers will burn easily.

Pour the juice from the bowl into shredded cucumbers, then add an appropriate amount of chili oil, and mix well.

This dish can be eaten as you like, don't make it too early as it will affect the taste if left for a long time.
