Garlic Bones
Overview
Oven-cooked dishes usually involve two steps: marinating and roasting. The method is simple, worry-free and less likely to fail. Today's garlic bone recipe adds an extra step, but it enhances the aroma and taste of the entire dish. Generally, frying is required to make garlic bones. Fried oil is not easy to store, and too much oil is not healthy. So today I roasted instead of frying. The effect is very good. The excess fat is roasted, the outside is dry and fragrant, and the inside is tender and delicious. There is no pressure to eat more.

Take half of the garlic and add appropriate amount of water to make a puree. Filter out the garlic juice and set aside.

Wash the ribs and chop them into small pieces, drain the water with kitchen paper towels, add light soy sauce, dark soy sauce, sugar, pepper powder, Sichuan pepper powder, rice wine, shredded ginger and garlic juice and mix well.

Marinate for more than 4 hours. Turn several times in between.

Arrange the marinated ribs on the grill grid and place a baking sheet lined with tin foil underneath. Place in the preheated oven at 190 degrees for about 30 minutes. Flip once in the middle.

Take out the roasted ribs and set aside.

Chop the other half of garlic and set aside.

Pour a little oil into the pot, add minced garlic and garlic chili sauce and stir-fry over low heat until the garlic becomes fragrant.

Pour in the grilled pork ribs and stir-fry evenly.
