Wash the mutton, cut into cubes, season with cooking wine and salt.

Wash and cut all ingredients.

Heat oil in a wok, add diced mutton and fry.

Fry until golden brown, remove and filter oil.

Overcook the mushrooms.

Add a small amount of remaining oil to the wok, add ginger, garlic, onions, green peppers, and scallions and saute until fragrant.

Add mutton and mushrooms and stir-fry. Add chili powder, five-spice powder and chicken essence and stir-fry. Mix well and turn off the heat.

Plate and serve, you're done.
