Clean the fish

Make diagonal cuts on the back of the fish and mince the ginger and garlic

Add cooking wine, light soy sauce, pepper, salt, minced ginger and garlic and marinate for 30 minutes (also rub it in the belly of the fish)

Chop tomatoes, green peppers and onions and set aside

Heat the pot, add oil and add a few green peppercorns

After the oil is hot, add the fish. Do not bring water or the oil will splash

Fry one side until golden brown, then turn over and continue frying

After the other side is also fried, move the fish to the side and put the garnishes in the empty space (if it is a wok, take the fish out first, fry the garnishes and then put it back into the pot)

Stir fry for a while, season, and remove from the pan
