I was lucky enough to enter the finals of the Xinliang Baking Competition, and I also received various powders used in the competition, which were very abundant, so I took a group photo with them.

Soak the egg yolks in corn oil for several hours in advance.

Mix peanut oil, sour water and invert syrup into a basin, stir well with egg beaters.

Pour in all-purpose flour, mix evenly and knead into a dough.

Cover with plastic wrap and let rest for more than two hours.

Place the egg yolks on a baking tray, spray with high-strength white wine, bake in the oven at 150 degrees for five minutes, let cool and set aside.

Roll the lotus paste and cake skin into balls one by one.

Take the lotus paste filling and wrap it in the egg yolk. This is a 50g mooncake. Because the egg yolk is relatively large, cut it in half. The egg yolk plus lotus paste filling will total 35g, and the skin will total 15g. If it is the first time to make mooncakes, it is recommended to have 20g skin and 30g filling.

Wrap the fillings in the pie crust and slowly push them upwards.

Put it into the mold and press out the pattern.

I also made some bean paste fillings and pressed them into patterns on the baking sheet.

Place in the oven at 180 degrees and bake for five minutes to set.

Take out and brush out a thin layer of egg yolk. It must be very thin, otherwise there will be no pattern when baked. For the egg yolk, add half an egg yolk and half an egg white and mix evenly.

Put it in the oven again and bake it at 180 degrees for 15 minutes. The mooncakes just out of the oven are as hard as rocks. After cooling, seal them and wait for one to two days for the oil to return before eating.
