  1. Wash the chicken legs.

  2. Remove and dice the chicken thighs; cut the dried chilies into small pieces; chop the onions, ginger, and garlic.

  3. Add a small amount of salt, starch, cooking wine, some minced onions, ginger and garlic to the diced chicken legs, mix well and marinate for about 15 minutes.

  4. Heat a wok and add plenty of vegetable oil.

  5. When the oil is hot, add the chicken and fry slowly over low heat.
