Cut the second section of the shrimp's back to pick out the shrimp line, and cut off the shrimp's whiskers and legs.

Wash and cut green onions and coriander into sections. Shred the ginger and slice the garlic.

Heat oil in a pan and sauté ginger and garlic until fragrant.

Pour in the prepared shrimps, stir-fry a few times, then add red wine and simmer for 2 minutes.
