Shred green onions

Light soy sauce, white vinegar, sugar, salt, mix well in a bowl and set aside

Wash the tenderloin and cut it into about 3mm thick slices, pat it loose with a knife, add ginger, cooking wine, a small amount of salt and marinate for a while

Mix eggs, starch, flour, a little salt and water to make a paste, add the meat slices and coat them evenly in the batter

Heat the oil in a pan, turn to low heat, unfold the meat slices and put them in one after another, fry until the meat slices are cooked through, drain the oil and remove

Turn up the heat and heat the oil until it is about 70% hot. Add the meat slices again and fry until golden brown. Drain the oil and remove

Leave some oil in the pot, pour in the sauce and let it bubble
