Mango Sticky Rice Parfait
Overview
I used some of the Thai black glutinous rice I bought to make sweet glutinous rice last time. I’m going to make some desserts today, this time with ice cream in it!

Black glutinous rice soaked for more than 2 hours in advance

It takes about 45 minutes to steam until cooked

While hot, add sugar and mix well. Cool and set aside

This is the required material. I didn’t take out the ice cream for fear of melting

Take a small pot and put coconut milk

Add sugar and melt, then turn off the heat and let cool

Take a plastic bag and put it on your hand, scoop some black glutinous rice

Add appropriate amount of bean paste in the middle, slowly close and shape into a ball

Put the glutinous rice balls into the plate

Add the cooled coconut milk and sliced mango, and finally top with ice cream
