Wash and cut spinach into sections.

Blanch: Boil water in a pot and add spinach. Remember to put the spinach stems for 30 seconds first, and then the spinach leaves. This will ensure that the spinach stems and leaves are ripe at the same time.

Rinse the blanched spinach twice in cold water. Then the spinach will turn green when cooled. If the temperature is too high, it will turn dark and unsightly, affecting the appearance. After it cools, remove the excess water from the spinach. This is the final effect.

Vermicelli: Pour the boiling water used to blanch spinach into a container, put the vermicelli in, soak for 3-5 minutes, then rinse with cold water.

Spreading egg pancakes: I forgot to take pictures of the steps of beating eggs. Beat three eggs into a bowl, add a little salt and beat them. (Put salt in the eggs so that the eggs are not so sticky and are easy to spread when spreading. Turn on the heat and put a frying pan (any kind of wok can be used) and put a little oil. Use a brush to spread the oil. If you don't have a brush, you can also use a kitchen towel (a small piece, just absorb the oil on the paper and spread it evenly on the bottom of the pot).

The whole process is on medium heat. When it is overheated, pour in the amount of one egg and immediately turn the pot over the fire so that the egg pancake becomes a thin round shape.

Just chop the coriander. If you don’t like coriander, you can add a little less. Place the minced coriander on the edge of the container (in order to prevent the chili oil from pouring on the coriander, you can put the coriander after pouring the chili oil on it)

Start frying the chili oil. The amount of oil is half that for stir-frying.

The pot will smoke slightly and the chili will turn black.
