Cut the pork into shreds, scratch it with salt, then add some cooking wine, add light and dark soy sauce and stir it evenly, then add starch and stir it evenly to lock in the moisture, and finally add some cooking oil and stir it evenly.

Finely chop onion and garlic.

Cut green pepper into shreds.

Heat oil in a pan and add onion and ginger.

Add shredded pork and fry until it changes colour, set aside.

Heat oil in a hot pan and fry shredded green pepper. I added two pieces of fatty meat and stir-fried it, but discarded it in the end.

After the green pepper shreds change color, add the fried shredded pork and salt. Stir well.

Remove from the pan.
