Prepare the ingredients: remove the heads and skins of the fresh shrimps, wrap them in the shells, add cooking wine, salt, pepper, and starch to marinate well, then refrigerate for 20 minutes. Cut tofu into small pieces, blanch in water, cool and set aside. Dice carrots and cucumbers. Soak the green beans in advance. Set aside corn kernels.

Put oil in the pot, fry the shrimp until the color turns red, set aside.

Leave remaining oil in the pot, add chopped green onion and ginger slices and sauté until fragrant. Add the diced vegetables except cucumber and stir-fry. Add tofu, salt, pepper and chicken essence and stir-fry briefly. Add a small amount of water and cook briefly.

When the soup is reduced, add shrimps and cucumbers, stir-fry, and add water starch to thicken the soup. Drizzle a little sesame oil to enhance the aroma before serving.
