Huadiao Drunken Chicken
Overview
In summer in Shanghai, the elderly and children in Jiangsu and Zhejiang areas love it as an accompaniment to wine and as an appetizer with meals. A must-have delicacy in restaurants. The chicken nuggets are extremely tender, the wine is rich in aroma, and it is a feast for the eyes. The chicken marinated in purple clay jars is also called Xiaobo Dou Drunken Chicken, a famous delicacy in Shanghai.

Buy a three-yellow chicken that is killed alive at the market (three-yellow chicken is a unique chicken breed in Shanghai, and local pullets can be bought in other areas). Come back and wash it with clean water (the head and tail of the chicken can be left out according to personal preference)

Pour water into the pot (it's better to cover the chicken) and bring to a boil. Add the whole chicken and ginger slices. Cover and cook for 15 minutes then turn off the heat. Simmer for another 5 minutes. (Do not open the lid during the process)

Take out the whole chicken and put it into the ice water prepared in advance. Cover it with ice cubes and wait for it to cool completely before taking it out and cutting it into pieces. (Ice cubes and ice water can make the chicken skin crispy and elastic, and the chicken pieces will be shaped after cutting into pieces, locking in the delicious flavor of the chicken juice)

Take a new pot and pour an appropriate amount of water and Shaoxing Huadiao wine (for one chicken, pour 2 to 3 taels of wine), add star anise, peppercorns, green onions, salt (can be more), and a small amount of chicken essence. Cook over low heat until the brine boils slightly, then turn off the heat and wait for the brine to cool down. Take a sealable bottle or food box and put the chicken pieces in. Pour the brine to cover the chicken pieces and put it in the refrigerator for 4 hours before eating. (You can also leave it overnight, it will be more delicious)
