Fish head with chopped pepper
Overview
Home-cooked food has no fancy presentation, only the taste of home. This fish head with chopped peppers is the taste of my sister in my memory. Every time I make it, only the peppers are left, and the remaining soup is reserved for the bowl of noodles. This is probably the best encouragement for me.

Wash the fish head and put it on a plate. The fish head is a bit big today, so I can only put it on this stainless steel plate.

Add a pinch of salt.

If you don’t have any cooking wine at home, add some white wine instead.

Shredded ginger.

Add some light soy sauce, massage the entire fish head evenly and marinate for 15 minutes.

While the fish head is marinating, we prepare the seasoning, peel the ginger and put it into a grinder.

Put the garlic in as well.

This red pickled pepper is bought in bags from the supermarket. After taking it out, you need to wash off the excess salt water on the surface and throw it into the crusher together with the pickled wild sansho pepper.

Crush it, of course you can also chop it by hand to make it more fragrant, but recently my hands stung when I touched the peppers, so I used this machine.

The steamer at home is on leave today. I use a wok and a trivet to steam. I boil water and put the trivet in place.

After the water boils, add the fish head and steam for 6 minutes.

Heat another pot, pour rapeseed oil into the pot, and add an appropriate amount of lard.

Add a spoonful of sugar after sauteing.

A spoonful of chicken powder.

Add a little light soy sauce, stir-fry evenly and set aside.

Steam the fish head for 6 minutes and use tongs to remove the water from the plate.

Then spread the fried chopped peppers on top and cover and steam for 5 minutes.

Sprinkle a little chopped green onion in the pot and it's ready.
