Cut the tofu into chunks of suitable size and thickness.

Cut the onion and garlic into mince, cut the millet pepper into sections, and cut the pepper into dices.

Put light soy sauce, dark soy sauce, oyster sauce, salt, and sugar in a bowl, add appropriate amount of water, stir evenly, and make a sauce.

Crack the eggs into a bowl and mix well. Add the tofu into the egg liquid and mix well.

Pour a little cooking oil into the pot to heat up, add the tofu cubes one by one, fry over medium heat until golden brown on both sides, and pour into a plate.

Pour cooking oil into the pot and heat it up, add minced onion, garlic and millet pepper (optional) and stir-fry until fragrant.

Pour in the prepared sauce.

Add the fried tofu and bring to a boil, stir-fry evenly, turn to medium heat and cook for about 2 minutes.

Add diced peppers (diced other vegetables can also be used) and continue to stir-fry evenly.

Pour in the water starch, reduce the juice over high heat and drain.
