-
Put a small amount of starch into the mold
-
Shake the flour in the mold, pour out the excess flour, and press the mold twice so that the mold only needs a thin layer of flour (you can also put the wrapped cake balls into the starch and roll it to remove the excess flour)
-
Place the wrapped cake balls, put on the mold and press down
-
Make all the mooncakes in sequence, placing them with gaps in between
-
Before putting it in the oven, use a spray bottle to lightly spray a layer of mist. Be careful not to spray it directly on the mooncakes. Spraying water from above will spread on the mooncakes. Don’t spray too much water, otherwise the cake skin will stick to your hands
-
Preheat the oven to 180 degrees and bake on the middle rack for seven minutes until the surface is slightly colored. Take it out. Wait until the temperature of the mooncakes is about 60 or 70 degrees and it is not hot to the touch. Then use a brush to brush a thin layer of egg yolk liquid (add a small spoonful of water to one egg yolk to make the egg yolk liquid). Wait until the surface has been brushed for the first time and it looks dry, then brush it thinly again
-
Bake for about 10 minutes, until the surface is golden brown. When the mooncakes are cool, use a brush to apply a thin layer of peanut oil on the surface. When the mooncakes are oiled, the mooncake patterns will be shiny and beautiful
