Wash the ribs with water, wash the onions and ginger and set aside

Add cold water to the wok (I used tap water filtered from a water filter), add small rows of water to blanch

After the water boils, the pot surface will be filled with foam. Turn off the heat and wash the blanched short ribs

Blanch and wash the ribs, put them into a bowl, add cooking wine, light soy sauce, ginger and uncut green onions evenly

Take out the steamed short ribs and set aside the soup

Fry the sugar color: After the pan is hot, add a little oil, add sugar, and stir-fry until it bubbles (I should have fried it for a while longer this time, but the color is not in place)

Pour in the ribs, stir-fry until browned, add sugar juice, rock sugar, and chopped scallions in two batches. Add vinegar before serving, collect the juice and serve on a plate
