Cut the chicken legs or wings into pieces, wash them, add cooking wine, oil and cornstarch and marinate them for 20 minutes.

Prepare the side dishes as shown in the picture. Spicy peppers enhance the flavor. If you don’t like spicy food, you can replace it with green peppers. Cut the potatoes into thick slices as they melt easily into the soup.

Heat the oil pan until it reaches 70% heat, add half of the pepper and garlic and stir-fry.

Add marinated chicken and stir-fry until golden brown.

Pour in the secret sauce: light soy sauce, dark soy sauce, cooking wine, chicken essence, sugar, salt, vinegar, stir in a bowl and pour evenly.

Add mushrooms and potato slices and stir-fry.

Pour water to cover the chicken, because the mushrooms will release water, just add a small amount of water. Bring to a boil over high heat and then simmer for 20 minutes.

Three minutes before serving, add the remaining pepper to collect the soup. Remove from the pan.
