Overview

I’ve been craving for Shaanxi’s special snack steamer cake for a long time. I didn’t see any selling it nearby, so I had to go a long way to buy it. I saw my mother making it before, so I tried to make it myself, and it turned out OK.

  1. Soak kidney beans and peanuts overnight, wash and dry them. The picture shows kidney beans. Soak glutinous rice for three hours

  2. Steam the red dates in the pot for 10 minutes, take them out and cut them (you can also use chopsticks to poke out the date cores when they are freshly taken out of the pot)

  3. Boil water in a wok and add soaked glutinous rice. The water should be as high as the rice. Keep stirring the rice without turning off the heat. When the rice is soaked, turn off the heat and stir for a while to prevent it from sticking to the pot

  4. Wash a clean container, wipe the edges clean and apply a little oil. First spread a layer of rice, then a layer of peanuts or kidney beans, and repeat this cycle until all the glutinous rice is used up. Spread red dates on top, and press it after spreading (I didn't press it, and in the end it felt like the dates and rice were not stuck together). Add more water to the steamer, place it on the grate, bring it to a boil over high heat, then steam over low heat for 40 minutes.

  5. After taking it out of the pan, I pressed it and it didn't feel too sticky. I could also mix the rice and beans together completely. Put some in a bowl, add sugar according to your taste, stir and serve.
