Preserved vegetable eggs
Overview
Preserved vegetables and eggs are a home-cooked dish popular in Taiwan, Fujian, and Chaoshan areas of Guangdong. Preserved vegetables are added to the eggs and stir-fried. Sometimes some green onions are also added.

Prepare materials. (Dried radish can also be bought ready-made in supermarkets)

Soak dried radish in water for 20 minutes.

Chop the soaked radish into small pieces.

Put oil in the wok and fry the dried radish over low heat. Fry the radish until dry.

Drain the dried radish, let cool, and add chopped green onion. Then beat in the eggs.

Add some pepper and mix well.

Grease pan with oil. (There should be less oil, just brush it with oil.) When the pot is hot, pour the beaten egg liquid into it and fry over low heat. After frying one side, carefully turn it over and fry the other side until golden brown.
